How about a hearty, hot, filling, vegan-friendly breakfast porridge that’s full of whole grains, protein, nutrients, healthy fats and DELICIOUSNESS?
Start to finish, your breakfast will be ready in about 20 minutes.
Quinoa-Oat Breakfast Porridge
Serves 1-2
- 1/4 c. quinoa
- 1/4 c. rolled oats (old-fashioned)
- 1/2 c. water
- pinch of salt
- Optional sweetener to taste
- sugar
- maple syrup
- honey
- Optional toppings, seasonings, and mix-ins
- raisins or other dried fruit
- apples or other fresh fruit
- walnuts or other nuts or nut butter
- flax meal
- cinnamon or cardamom
- butter or cream
- milk, apple juice, or water
Add 1 cup of water to the Instant Pot and fit it with the included rack. Rinse quinoa well. Combine rinsed quinoa with oats, 1/2 c. water and salt in a small stainless steel pot that fits inside the Instant Pot, and place the small pot in the Instant Pot on the rack. Close and cook on Manual for 2 minutes. When the Instant Pot beeps, let the pressure go down for 10 minutes, and then release the rest of the steam. Remove the small pot of cooked grains. Stir in optional additions, and serve.
